J. Bruce German - University of California, Davis
Dr. German is a professor in the Department of Food Science and Technology at UC Davis’ College of Agriculture and Environmental Sciences. Current research interests include the role of dietary fat in the structure and function of biological lipids, the role of milk components in food structures and health and the use of metabolic assessment to personalize health. German was the first John Kinsella Endowed Chair in Food Nutrition and Health at the University of California and also serves as a senior scientific advisor for the Nestlé Research Center in Lausanne, Switzerland.
